We’re proud to introduce Finca San Jerónimo as our newest producing partner and our first long-term relationship in Guatemala. Situated in the volcanic highlands overlooking Lake Atitlán, the farm has become known for exciting cultivation, thoughtful environmental management, and coffees that consistently express clarity, sweetness, and terroir.

Owned and operated by the Bressani family, Finca San Jerónimo has spent decades refining an approach that balances tradition with innovation. Coffee is only one part of a larger agricultural system in which biodiversity, soil health, and eco-friendly farming methods work together to produce exceptional fruit. That philosophy is evident in every harvest: healthy trees, carefully selected cherries, and coffees that require minimal intervention to shine.

A huge portion of the estate remains intentionally wild, as a protected nature reserve where coffee shares the landscape with a pristine ecosystem. Built within the farm is a living laboratory dedicated to discovering natural, regenerative ways to outsmart unwanted fungi and pests, proving that great coffee starts with healthy biology, not heavy chemicals.

Although coffee is the headliner at Finca Jerónimo, it is not the only show going on at the farm. Cacao, pepitas, passion fruit, and honey flourish alongside the coffee trees, while a working dairy transforms the milk of grass-fed cows into rich creams and artisan cheeses.

Bees play a big role beyond producing honey, serving as an integral part of the ecosystem that powers the farm’s biodynamic philosophy.  Every plant, every pollinator, and every grazing animal contributes to a system where nothing exists in isolation, and the coffee is all the better for it.

This coffee is much more than the obligatory origin coffee. For us, it represents more. It marks the beginning of a relationship with a  Heady producer whose values closely match our own: respect for the land, relentless attention to quality, and a belief that extraordinary coffee starts long before roasting.

Our first release from the farm is a classic washed Catuaí, a coffee that demonstrates why Guatemala remains one of the world’s most celebrated origins.

The cherries are selectively handpicked at peak ripeness, then depulped and thoroughly washed to remove the mucilage. The parchment coffee is then slowly dried under carefully controlled conditions, preserving transparency and allowing the variety and terroir to take center stage.

The result is a cup defined not by processing, but by precision.

In the cup, there is a layered sweetness reminiscent of cane sugar and milk chocolate, balanced by a mild citrus and crisp apple acidity. Toasted almond, baking spice, and delicate floral notes emerge as the coffee cools, while a silky body and a long, clean finish create an elegant, complete sensory experience.

A beautifully executed washed coffee offers one of the purest expressions of origin, allowing the producer’s craftsmanship to speak with notable clarity.

While we’re often drawn to unique varietals, experimental fermentations, and uncommon processing methods, coffees like this remind us that excellence doesn’t always need embellishment.

This is the first step in what we hope will be a lasting partnership. As future harvests arrive, we’ll continue exploring what Finca San Jerónimo has to offer, from timeless washed lots to more adventurous processing experiments.
