The highly coveted Chiroso varietal, one of the rarest varietals on Earth, has arrived in our warehouse, and we're extremely excited. Before you start thinking about encased meats, let me share some things about this unique coffee variety.

Chiroso is a slang term in rural Colombia for something that’s a bit elongated. While not a very common word, producers named it after the elongated beans of this varietal. The hype behind the Chiroso is that it is a mutated Caturra, or, more loosely, that it is associated with Ethiopian Landrace hype.
With continuous genetic testing on coffee plants, an up-and-coming cultivar, Chiroso, was recently discovered to be part of this Ethiopian Landrace lineage. With its regal background, it has a profile that most coffee drinkers covet - tart, clean, and sweet.
However, as my man Chuck D advises, don’t believe the hype. Instead, focus on how expertly we roasted this coffee, highlighting its prominent, floral, lively acidity and complex profile.
There’s something quietly seductive about Chiroso; it doesn’t shout, it whispers with intent. Structurally elegant, it features an elongated bean shape that almost serves as a visual cue for what’s in the cup: heady florals, crisp acidity, and a flawless sweetness that sits between tamarillo, ripe citrus, and stone fruit. Chiroso has carved out its own identity in the world of specialty coffee, and we are here for it.
