EL TRUENO LOT 2
This is an incredibly clean medium roast cup of coffee. What makes this coffee unique is the UV-selected sorting method the raw green beans go through post-drying. After the beans are harvested they are dried in raised beds in a dome-shaped solar drier where they dry at a temperature range of 25-34°C for 28 days.
Once the beans are dried to an appropriate moisture level they are put through a rigorous selection process known as Ultraviolet selection. The coffee beans are screened under a UV light exposing any defective beans in the lot. This is a rare selection process. This entire lot was UV-selected by hand to remove fully fluorescent (defective) beans, which resulted in a cleaner cup and improved the coffee’s attributes.
