Co-Fermentation Process

Freshly picked Castillo cherries begin with 120 hours of anaerobic fermentation with wine yeast, letting the fermentation get funky in all the right ways. Then the cherries are de-pulped and sent back into the darkness for another 72 hours, this time with dehydrated watermelon, fruit glucose, and a little dose of CO₂.

Water Temp: 98 degrees celsius (208.4 degrees farenheit)

*a cold water bloom can be utilized to mute some of the outward acidity

Cold water bloom pour- 75 grams; pause :30 seconds

Hot water pour to 130 grams, pause :45 Seconds

Hot water pour to 215 grams; pause :45 seconds

Hot water pour to 300 grams
